Christians commemorate Good Friday as the day when Jesus Christ was crucified. In the Philippines, there is a tradition of abstaining from eating meat every Friday during Lent and the holy week. Following this tradition, this is my take on the classic Filipino dish called Sisig, which is #vegan and can be enjoyed as a side or main dish during Lent or maybe even on Easter Sunday.
Sisig is originally a sour dish from the Central Luzon province of Pampanga. I made it more savory while still retaining the sour flavor profile. I felt that changing it some will improve the flavors and hopefully make it a more delicious dish.
Ingredients
The ingredients for today's dish include 1 small radish, 1 potato, 25 g. of vegan liempo (meat replacement), 3 tablespoons of black beans, 1 bell pepper, 1 small tomato, bay leaves, and 1 small tofu block.
Procedure
Mise En Place. Clean and cut the ingredients.
Start off by heating 2 to 3 tablespoons of coconut oil and stir-fry the diced potatoes. At the same time, grill the red bell pepper or just pop it in an oven toaster for around 5 to 7 minutes.
Add in the julienned tomatoes and diced radish and continue stir-frying.
Add in the diced tofu and vegan liempo. Season with salt and pepper, some sugar, chili powder and add in the black beans. Put in 6 to 8 tablespoons of vinegar (or more, depending on your preference).
Lastly, add in the bell pepper and 1 teaspoon of mushroom powder. Cover and cook for a few more minutes.
Serve hot and enjoy.
