Crispy purple cabbage and corn soup
Sopa crujiente de repollo morado y maíz
First of all, a huge greeting to the entire @naturalmedicina community, especially to the host of this challenge. Our esteemed chefs @justinparke, this is my first participation in this challenge and I sincerely hope you like it, I like simple preparations, and quick to make, so without further ado I will show you my masterpiece (laughs) I think you can skip that one comment if you want.
Primeramente un saludo gigantesco a toda la comunidad de @naturalmedicina en especial al anfitrión de este desafió Nuestro estimado chefs @justinparke, esta es mi primera participación en este desafió y espero de corazón sea de su agrado me gustan las preparaciones sencillas, y rápidas de realizar, así que sin mas preámbulos les mostrare mi obra maestra (risas) creo que me pase con eso pueden obviarlo si quieren.

150 gr of Cabbage | 150 gr de Repollo |
20 gr of onion | 20 gr de cebolla |
40 gr carrot | 40 gr zanahoria |
20 gr red paprika | 20 gr pimentón rojo |
60 gr of corn | 60 gr de maíz |
3 garlic cloves | 3 dientes de ajo |
custom salt to taste | sal personalizada al gusto |
cilantro | cilantro |
250 ml of water | 250 ml de agua |
3 tablespoons vinegar | 3 cucharadas de vinagre |
Preparation / Preparación
- wash all the ingredients

- Parboil the corn until soft, drain and cool.
Coloque a sancochar el maíz hasta que este blando, deje escurrir y enfriar .
- Cut the onion, carrot, paprika into squares,
Corte la cebolla, la zanahoria, el pimentón en cuadros pequeños.
- Cut the cabbage into strips (julienne),
Corte el repollo en tiras(julianas )
- In a pot, place the corn, carrot, onion, and paprika to cook over medium heat until the carrot has a soft consistency.
En una olla coloque, el maíz, la zanahoria, la cebolla, el pimentón a cocinar a fuego medio hasta que la zanahoria tenga una consistencia blanda.
- While the vegetables are cooking, place the cabbage to soak in water with the vinegar.
Mientras se cocinan los vegetales coloque el repollo a remojar en agua con el vinagre.
- When the carrot has the consistency we want, add the garlic, salt and coriander and leave covered over low heat for 2 minutes.
Cuando la zanahoria tenga la consistencia que queremos, agreguemos el ajo la sal y el cilantro y dejamos tapado a fuego bajo por 2 minutos .
- After 2 minutes we uncover and add the cabbage, turn off the heat and leave covered for 1 minute.
Pasados los 2 minutos destapamos y agregamos el repollo , apagamos el fuego y dejamos tapado por 1 minuto.
