Hello beautiful foodies! I consumed my leftover vegetables that I bought lastweek. and decided to make mixed vegetable curry today. You can use any vegetable in this curry. This is simple and quick to prepare. So let's get started.
Ingredients:
Potato 1pc medium
Green peas a handful
Mushroom 1pc.
Cauliflower
Pepper (red & yellow)
Carrots
Fresh Coconut milk 1 1/2 cup
Coconut cream / thick 2tbspn
Ginger garlic paste
Onion 2pcs.
Tomato 1 pc.(Puree)
Masalas
Cardamon pods 2pcs.
Cloves 1 pc.
Cinnamon 1/2 inch
Nutmeg 1/8 of whole
Cumin seeds 1/4 tspn coarse
Chili powder 1/2 tspn
Coriander powder 1tbspn
Turmeric powder 1/2 tspn
Bay leaves 1pc.
Methods:
chopped all necessary ingredients
Extract fresh Coconut
Heat oil in a pan. Splutter cardamon, cumin, cloves, bay leaves, cinnamon & nutmeg and onion. Saute onion till brown.
Add in ginger garlic paste. Saute till raw smell is gone.
Add in tomato puree, put to lid. Cook tomato in low fire.
The tomato is well cooked
Add in coriander, turmeric, chili powder & salt.
Give it a mix
Add in vegetables that are taking time to cook, pour 1 cup of water. Cook veggies till 70% soft.
Pour in coconut milk. Give it a stir.
Add in remaining veggies that are easily to cook. Put to lid cook for 10 min. In low fire.
Add in coconut cream. It makes the curry more flavourful. Stir.
The curry is almost done.
Add in mint leaves. Then switch off flame.
Vegetable curry is perfect match with rice of chappati.

This is a recipe that seems easy to prepare, plus it contains very tasty vegetables such as mushrooms and potatoes, my favorites.
