Vegetable Lodeh Indonesian Cuisine | Plant-based Cooking Challenge.

How are you all my friends..?
This time I try to share an article about a typical dish from my country Indonesia, this dish is called Vegetable Lodeh.

This dish is full of vegetables as the main ingredient and has a very fragrant aroma and is very delicious to enjoy, vegetable lodeh is a dish of mixed vegetables seasoned with spices and coconut milk.

This article also follows the #plantbased cooking challenge held by @justinparke every week, hopefully my writing can be useful for all of you.

A sunny afternoon on the weekends made my wife and I struggle with cooking activities in the kitchen, one of the dishes we prepared for lunch was a typical Indonesian vegetable lodeh. Cooking activities in the kitchen turned out to be very inconvenient for me, who is not an expert in this field, but under the guidance of my beloved wife, we did the job of cooking vegetable lodeh together until it was finished.

Lodeh vegetable cuisine is very good for the health of the human body, this is because this vegetable is made from vegetables and natural herbal spices that have many benefits to prevent or treat various diseases in our bodies. I will guide you on how to cook a typical Indonesian lodeh vegetable that I got from today's experience in the cooking kitchen.

The first step.
The first thing to prepare is the utensils for cooking, make sure all the cooking utensils are fully available before we go to the next step.

Second Step.
Prepare the necessary ingredients, as for cooking Indonesian lodeh vegetables, the ingredients are as follows:

Red onion as needed.
Garlic as needed.
Pecan as needed.
Bay leaves as needed.
Lao leaves as needed.
Melinjo as needed.
Red chili as needed.
Green chili as needed.
Coconut milk as needed.
Salt as needed.
Brown sugar as needed.
Sugar as needed.
Tempe as needed.
Long beans as needed.
Pumpkin as needed.
Eggplant as needed.
Enough water.
Cooking oil.

Cut or slice all the ingredients as needed, then wash them thoroughly, and puree the onion, garlic, candlenut, add enough water, blender or grind all the ingredients until completely smooth.

Third step.
Next, heat a frying pan or cooking pot using cooking oil, then add the laos leaves, bay leaves, spices that have been mashed earlier, add red chilies, green chilies and tempeh. Saute the ingredients until completely cooked, then add the melinjo leaves, eggplant, long beans, pumpkin, coconut milk and add enough water, stir the dish until evenly distributed.

After stirring evenly add brown sugar, salt and sugar to taste and stir until evenly distributed. After that, cover the dish until it is completely cooked, I cover it for about five minutes, then let's mix the typical Indonesian lodeh vegetable for now.

Fourth Step.
When finished, remove the typical Indonesian lodeh vegetable dish from the frying pan or cooking pot and then the dish to the serving table for the family to enjoy. This food is very delicious and delicious if we consume it while it is still hot, the fragrant aroma of the spices and vegetables in this dish is very appetizing.

This food can be enjoyed by various ages but you should not give it to babies under the age of five, this is because this dish has a spicy taste.

This looks better than any veg lodeh I've ever had in a restaurant. Nice work, I can smell the flavors as I read this post.
