This sounds so much better than the stuff you and Monkey-B ate on your recent bicycle trip and that is a huge understatement. How blessed are your children with two great chefs for parents. Next step is to actually surround yourselves with an abundance of food. It will happen, sooner rather than later.
Yum yum! This looks mouthwateringly delicious...
The veg roti ingredients are the same boring longbeans and potatoes day after day. I don't know why cooks here don't try to reinvent something with flare. Aloo jeera combined with our method of stir-frying longbeans in coconut meat, curry leaves, and mustard seeds, would be a much better filling for a roti, but I think Surinamers are creatures of habit, and they like the food to be predictable just like most Americans.
