Seriously. Is there anything better than Ball jars? The answer is YES, Ball jars filled with cobbler!
Have you ever purchased too much of a good thing and that good thing starts to age on you? Why blackberries, why must you soften so? Just like bananas, soft berries are great for baking. Or freezing, but that’s a different post. ;) However, if you don’t have fresh berries on hand, frozen are just as tasty in this recipe. Not a fan of blackberries? Fine, no cobbler for you and more for me. No, really you can sub out the blackberries for any fruit your picky heart desires.
This recipe is actually so simple that it even blew me away. Mix a few ingredients in one bowl, pour batter, sprinkle blackberries and nuts on top, bake and BOOM, kitchen miracles my friends, kitchen-miracles.
There ARE ways to make this healthier and YES I could’ve done that from the beginning, but ladi-dah, too bad. I WILL be editing the recipe to make a healthier version that is going to be more of a breakfast bake. Yum-ee.
Until then, make these. A lot of them, because you can give them away as the cutest little gifts EVER.
Now, before you go blowing up your oven, please let me give you cautionary advice. Ball jars are meant to be used with a moist heat. Do not simply pop these babies into an oven and allow them to break. They’re high maintenance and require a little water bath. In turn, the water bath will steam the cobbler to be moist [eek!] and fluffy. Also, depending on the size of your Ball jars the baking time will vary.
Homemade Blackberry Cobbler
Ingredients
1 c flour
½ tsp salt
1.5 tsp baking powder
¾ c sugar
8 tbls Earth Balance vegan butter, melted
1 c coconut milk
3 tbls lemon juice
1 tbls lemon zest
1 tsp vanilla extract
2 c blackberries, fresh or frozen
1 c chopped walnuts (you can use any nut)
Instructions
Pre-heat oven to 400 and grease Ball jars.
Mix all ingredients in a bowl.
Fill Ball jars ¾ full with batter
Sprinkle in blackberries and walnuts, being sure to push them down into the batter
Fill a baking pan with about 2 inches of water
Place filled Ball jars in water bath
Bake 45-60 minutes (depending on size of jar) or until golden brown and baked through the middle
If not serving immediately, once done quickly pop the lid on the Ball jars to ensure vacuum seal
Flour, baking powder, sugar, and salt.
Melted vegan butter.
Lemon juice and zest.
Vanilla.
Pour into greased Ball jars.
Sprinkle with nuts and blackberries and submerge in water bath.
The first, warm, fluffy bite!
