So let me start off by saying that I was not a believer when I first heard of chia pudding. I never ate a ton of pudding as a kid, unless it was in the form of a popsicle. But this refreshing lemon and berry chia pudding parfait with the crunch of macadamia has won me over.
Why do we love it?
- Chia seeds are high in fiber with approximately 11 grams per ounce.
- Chia seeds boast 4 grams of protein per ounce.
- Little to no added sweetener.
- Lemon and raspberries? Hello!
- Perfect healthy guilt-free dessert, snack or even breakfast

So if you are a non-believer like me, this is the gateway parfait. Try it!
Recipe: Lemon Raspberry Chia Parfaits
1/3 c. chia seeds
1 1/4 c. hemp milk (or other non-dairy milk-use homemade for raw)
2 tbsp. fresh lemon juice
1 tbsp. maple syrup or raw honey
1 tsp. lemon zest
1 tsp. vanilla extract
pinch of salt
1 c. raspberries
1/3 c. macadamia nuts. roughly chopped
In a bowl combine the ingredients for the chia pudding. Refrigerate for 3-4 hours or overnight. Once the chia pudding is set, line the bottom of 4 small jars with raspberries and macadamia nuts. Pour chia pudding on top until filled to the rim of the mixture. Top off with remaining raspberries and macadamia nuts.
