My province is Nueva Ecija (Philippines), and my first language is Ilocano then I learned our national language "Tagalog" before I turned five years old. Being an Ilocano has the perks of eating some of the simplest yet delicious and healthy dishes in our country. One good example is Buridibod. Buridibod in its simplest form is composed of Moringa fruit, Sweet Potatoe, Fish Sauce, and Fried/Grilled Fish. But buridibod has evolved ever since. Now tomatoes are added to the ingredients. With that being said, I am going to show you how I cooked a Buridibod with the additional ingredient, tomato. Actually, the way of cooking is still the same even if an ingredient is added.
So, without further ado, here's how I cook this simple but delicious and healthy dish called Buridibod...
- Moringa Drumstick - 400 grams
- Sweet Potatoes - small, 2 pieces
- Tomatoes - small, 3 pieces
- Onion - small, 2 pieces
- Fish sauce - 50 ml
- Salt (for adjusting the saltiness of the dish)
Peel and slice the Moringa drumstick to smaller sticks


Peel and slice the sweet potatoes into smaller parts


Slice the tomatoes


Peel and slice the onion


Prepare the fish sauce
1. Put all the ingredients in a bowl except for the fish sauce then add some water
2. Wait for it to boil like this
3. Get a ladle then put some boiling soup into the fish sauce then stir it
4. Then put the mixture back into the pot, add some salt to adjust the saltiness of the soup, turn off the heat
5. Then bring it to boil again
6. When all the ingredients are cooked especially the Moringa drumstick it is done
Note: To take the taste to the next level add any fried or grilled fish. But I do recommend Milk FIsh of Tilapia.
