Soup Stories #3: Chinese Egg Soup / 中華風卵スープ

I'm not sure if this soup is authentic Chinese soup or a Japanese variety but my grandma and my mother called it "Chinese Egg Soup".

It warms up our body with a lot of ginger and green onions. An egg adds a good Umami taste. Other than ginger, green onion and an egg, ingredients are flexible. This time I used Chinese cabbage, carrot, corn and tofu in addition. I like the fun biting texture of corn in this soup.

The soup fits well with plain rice for a light lunch and also with dumplings. We had the soup with dumplings for lunch.

Here is the brief recipe:

  1. Mince ginger and chop green onion.
  2. Cut veggies such as Chinese cabbage, carrot etc in your favorite way. (I like the dried tomato & cabbage combination too. Mushrooms such as Shiitakes are a good addition for taste.)
  3. Stir fry ginger, green onion and veggies with sesame oil, rapeseed oil or some Asian taste oil.
  4. Season with salt and pepper.
  5. Add 1-2 tablespoons of white wine and stir fry some more.
  6. Add water and cook until vegetables become soft.
  7. Season with soy sauce.
  8. Add a beaten egg.
  9. Garnish the soup with chive and sesame seeds (optional).

That's it! I hope you enjoy it during the cold winter season. It definitely helps you to warm up your body.

このスープが本当に中国のスープなのか、日本でアレンジされたものなのかはわかりませんが、私の祖母や母は「中華風卵スープ」と呼んでいました。

生姜とネギがたっぷり入っていて体が温まり、卵のうまみがいい感じに効いています。生姜、ネギ、卵以外の具材は自由で、今回は白菜、にんじん、とうもろこし、豆腐を加えました。コーンの歯ごたえが楽しいので台所にあると大抵入れます。

ご飯と一緒に軽く食べてもいいし、肉まんなどと合わせてもおいしいです。下の写真はお昼に肉まんと一緒に食べたときのものです。

以下、簡単なレシピです。

  1. 生姜は細かいみじん切り、ネギは粗めのみじん切りにする。
  2. 白菜、にんじんなどの野菜を好みの大きさにカットする。私は千切りが好きです。(ドライトマトとキャベツの組み合わせや、椎茸などのキノコ類を加えるのもおすすめ)
  3. 生姜、ネギ、野菜をごま油や菜種油などの油で炒める。
  4. 塩、胡椒で味を調える。
  5. 白ワイン大さじ1~2を加え、さらに炒める。
  6. 水を加え、野菜が柔らかくなるまで煮る。
  7. 醤油で味を調える。
  8. 溶き卵を加える。
  9. お好みでネギとゴマをトッピングして出来上がり!

本当は料理酒なのだと思うのですが、高いので安い白ワインですwwwスープこの時期便利でよく作るのですが、父ちゃんに足りてるのか若干不安です😅
