Among my new projects for the year 2025, there is to post more regularly on Hive, and that is what I plan to do today! Indeed, I love sharing my culinary discoveries and the new recipes that I test.
And since this week, I tested a lot of new recipes to vary pasta and rice, I decided to document everything. đ
Today, I share with you a recipe for quinoa risotto with butternut squash.
It is a simple recipe, but it requires a little time in front of you. I think it took me about 35/40 minutes to prepare this dish. But believe me, the effort and time spent are really worth it! đ
Ingredients for 2 people:
- œ butternut squash,
- 175 g quinoa,
- 1 onion,
- 10 cl crĂšme fraĂźche,
- 50 cl vegetable stock.
Preparation steps:
Cut the vegetables
Butternut squash
I started by cutting the butternut squash in half because for the recipe, I only need half of the butternut squash.
Then, I started by peeling it. Then, I removed the seeds.
And I started to cut thin strips in which I cut small pieces.
The onion đ§
Then, I took care of the onion. I first cut it roughly, then I decided to cut smaller pieces. The size of the onion pieces is mainly a matter of taste.
The cutting of the vegetables is already finished:
Cook the vegetables
To cook the vegetables, I took a Dutch oven, because my frying pan is a little small (if you saw my last recipe, you know what I'm talking about đ€Ł). Besides, I don't yet manage cooking very well in this type of utensil.
In short, I simply added a drizzle of olive oil, the pieces of butternut squash, the pieces of onion and a little salt.
I let it cook for 10-15 minutes on low heat with a lid. And when the butternut squash became tender, I increased the heat a little to sear it and color it. I let it color for 5 minutes while stirring.
Once cooked, I put the vegetables in a plate with a lid (so that they stay warm).
Take care of cooking the quinoa
I then took care of the quinoa and its cooking.
Weigh the quinoa
To do this, I started by weighing my quinoa: 175g for two. This is a correct amount if you don't eat anything else, but otherwise, you can reduce it to 150 or even 130g, I think.
Take care of the vegetable broth
Then, I took care of the broth. I boiled 50 cl of water to dissolve my bouillon cube. And I mixed well to have a homogeneous broth.
Once the broth was ready, I was able to start cooking the quinoa risotto.
Cook the quinoa
I first put a drizzle of olive oil in the pan, then I added my quinoa.
Once it started to crackle, I added a little broth and mixed. And then, each time the quinoa had absorbed the broth, I added more. And this, until I reached the end of my broth.
Add the cream
Once the quinoa has absorbed all the broth, it's time to add the crĂšme fraĂźche and mix. The mixture is creamy, it makes you want more!
Add the vegetables
All that's left to do is add the vegetables and mix everything together!
Tasting
And there you have it, the butternut squash quinoa risotto is ready to be enjoyed. And I don't know if the photo makes you want more, but I assure you that it's super good! The mixture is pleasant on the palate, the flavors are there. đ
This was a great discovery for @genesisledger and me. We're keeping this recipe in our recipe list and will make it again very soon. By the way, I'm sure it's possible to create variations of it, I can't wait to try it!

Et comme cette semaine, jâai testĂ© pas mal de nouvelles recettes pour varier des pĂątes et du riz, jâai dĂ©cidĂ© de tout documenter. đ
Aujourdâhui, je partage avec vous une recette de risotto de quinoa au butternut.
Câest une recette simple, mais qui nĂ©cessite dâavoir un peu de temps devant soi. Je crois que jâai mis environ 35/40 minutes pour prĂ©parer ce plat. Mais croyez moi, lâeffort et le temps passĂ© valent vraiment le coup ! đ
Les ingrédients pour 2 personnes :
- œ butternut,
- 175 g de quinoa,
- 1 oignon,
- 10 cl de crĂšme fraĂźche,
- 50 cl de bouillon de légumes.
Les étapes de préparation :
Couper les légumes
La courge butternut
Jâai commencĂ© par couper le butternut en deux car pour la recette, je nâai besoin que de la moitiĂ© de la courge butternut.
Ensuite, jâai commencĂ© par l'Ă©plucher. Puis, jâai enlevĂ© les graines.
Et jâai commencĂ© Ă couper des fines lamelles dans lesquelles jâai coupĂ© des petits morceaux.
Lâoignon đ§
Ensuite, je me suis occupĂ© de lâoignon. Je lâai dâabord coupĂ© grossiĂšrement, puis jâai dĂ©cidĂ© de couper des plus petits morceaux. La taille des morceaux dâoignon, câest surtout une affaire de goĂ»t.
La découpe des légumes est déjà terminée :
Cuire les légumes
Pour cuire les lĂ©gumes, jâai pris un faitout, car ma poĂȘle est un peu petite (si vous avez vu ma derniĂšre recette, vous savez de quoi je parle đ€Ł). Dâailleurs, je ne gĂšre pas encore trĂšs bien la cuisson dans ce genre dâustensile.
Bref, jâai simplement mis un filet dâhuile dâolive, les morceaux de courge butternut, les morceaux dâoignon et un peu de sel.
Jâai laissĂ© cuire 10-15 minutes sur feu doux avec un couvercle. Et quand la courge butternut est devenue tendre, jâai augmentĂ© un peu le feu pour la saisir et la colorer. Jâai laissĂ© colorer pendant 5 minutes en mĂ©langeant.
Une fois cuit, jâai mis les lĂ©gumes dans une assiette avec un couvercle (pour quâils restent au chaud).
Sâoccuper de la cuisson du quinoa
Je me suis ensuite occupé du quinoa et de sa cuisson.
Peser le quinoa
Pour cela, jâai commencĂ© par peser mon quinoa : 175g pour deux. Câest une dose correcte si vous ne mangez rien d'autre, mais sinon, vous pouvez baisser Ă 150 voir 130g, je pense.
Sâoccuper du bouillon de lĂ©gumes
Ensuite, je me suis occupĂ© du bouillon. Jâai fait bouillir 50 cl dâeau pour dissoudre mon cube de bouillon. Et jâai bien mĂ©langĂ© pour avoir un bouillon homogĂšne.
Une fois le bouillon prĂȘt, jâai pu commencer la cuisson du risotto de quinoa.
Cuire le quinoa
Jâai dâabord mis un filet dâhuile dâolive dans la poĂȘle, puis j'y ai ajoutĂ© mon quinoa.
Une fois que cela commence Ă crĂ©piter, jâai ajoutĂ© un peu de bouillon et jâai mĂ©langĂ©. Et ensuite, Ă chaque fois que le quinoa avait bien absorbĂ© le bouillon, jâen remettais. Et ce, jusquâĂ arriver Ă la fin de mon bouillon.
Ajouter la crĂšme
Une fois que le quinoa a absorbĂ© tout le bouillon, câest le moment dâajouter la crĂšme fraĂźche et de mĂ©langer. Le mĂ©lange est onctueux, ça donne envie !
Ajouter les légumes
Il ne reste plus quâĂ ajouter les lĂ©gumes et Ă mĂ©langer le tout !
DĂ©gustation
Et voilĂ , le risotto de quinoa Ă la courge butternut est prĂȘt Ă ĂȘtre dĂ©gustĂ©. Et je ne sais pas si la photo donne envie, mais je vous assure que câest super bon ! Le mĂ©lange est agrĂ©able en bouche, les saveurs sont au rendez-vous. đ
