Good morning foodies bee hive, I hope everyone is doing okay?,It's a new week and I decided to introduce one of my favorite country food which is the Nigerian Jollof rice.
It is a popular dish loved by all and it is a dish you must have when you attend a Nigerian party especially wedding. It is basically tomato based stew with rice and meat stock but what makes it different is the passion put into it and most importantly everyone have their own way of preparing it but today I am going to show you how I made it so let's go.
INGREDIENTS:
- 4 cups of rice.
- 1 kilo of meat.
- 3 bullion cubes.
- 2 teaspoons of curry.
- 2 teaspoons of thyme.
- 4 cooking spoons of Vegetable oil.
- 2 onions bulb.
- Vegetables (carrots,green peas and beans).
- 140g of tomato paste.
- 4 cups of blended tomatoes and peppers.
- Salt to taste.
DIRECTIONS:
- Wash the meat and season with 1 seasoning cube, 1 teaspoon of curry,1 teaspoon of thyme, chopped onions and salt to taste. Boil for 15 minutes.
2.Heat up a pan at medium heat, add four cooking spoons of Vegetable oil in to the pot, wait for 2 minutes to allow the oil heat up then add the meat and fry till it's brown.
3.Add the chopped onions and fry for 2 minutes till you can smell the flavor.
4.Add the tomato paste and stir fry for 5 minutes to remove the sour taste.
5.Add the blended tomatoes and peppers into the pot and Cook for 15 minutes or till the oil float on top.
6.Add the rice into the stew and stir-fry for 5 minutes, then add the meat stock gotten from the meat. You can add more water if your stock is not enough and check for seasoning too.
7.I love to add my fresh peas to cook with the rice, cook the rice for 20 minutes or till the water dries out and the rice is perfect.
8.once the water is dry, add the vegetables and onions then mix together.
