Today is my country's independence day. I want to make a traditional cake, which is Putri Mandi filled with mung beans paste. Putri Mandi Cake is one of the typical cakes from Sumbawa, Indonesia. "Putri Mandi" in my language means a princess who is bathing.
Some people call Putri Mandi cake as Bugis cake. The ingredients of both are the same made of glutinous rice flour mixed with fresh coconut milk. But the difference is that the Bugis cake is wrapped in banana leaves filled with grated coconut jam. Here's how to make Putri Mandi Cake.
Ingredients
- Glutinous rice flour (250 gr)
- Rice flour (50 gr)
- Cornstarch Maizena (50 gr)
- Peeled mung beans (150 gr)
- Vanila powder (1/2 teaspoons)
- Food coloring
- Pandan leaves (1 pcs)
- Grated coconut
- Sugar (150 gr)
- Salt (1/2 teaspoons)
How To Make
Making Mung Beans Paste
First we will make the stuffing paste. Steam the mung beans for about 30 minutes. If it is finished then pounded until smooth.
While waiting for the mung beans to steam, squeeze the grated coconut to make coconut milk.
Cook the mashed mung beans over medium heat. Add sugar, coconut milk, a pinch of salt and a pandan leaf. Cook until the dough is shaped and not sticky.
Making Flour Dough
Combine dry ingredients of rice flour and glutinous rice, mix well. Then add 250ml of water into the mixture gradually while dripping food coloring.
Mix well until the dough can be formed. Form a round dough filled with cooked mung bean paste. After that the dough is ready to be steamed.
Steam the dough for about 10 minutes. The next step is to make the vla while waiting for the cake to cook.
Making Vla
Add coconut milk, sugar, salt, cornstarch maizena, vanilla powder and a pandan leaf to the pan, cook over medium heat.
Stir well until the fla is thick and frothy. Serve the fla and Putri Mandi cake into the mold. Cake is ready to be served.
