Today I'm going to tell you how we cook pork tongue, a delicacy that helped us out in the 90s. Late 90s, young family, seasonal work was not easy. Coming into the market, we had to think hard about how best to use our family budget. Perhaps someone will smile when reading my story. But it really wasn't easy at the time. Prices were biting, you could already buy everything, but there would have been a price.
At our market the meat was twice as expensive as pork tongue. Usually this dish was served cold or in a pour for the holiday table. I decided to expand our diet and bought pork tongues. Compared to beef tongue, beef tongue was more expensive than meat. It really tasted good, but we could afford otherwise).
It is important to buy fresh tongue, properly processed and cook it properly. First you need to clean it well, then soak it in cold water for a couple of hours. Well washed and boiled with an onion and a bay leaf for an hour and a half. If the tongue is young, it will boil well.
Today I decided to buy our favorite delicacy, I bought 4 tongues. Immediately cut off the extreme part, there is not very edible gristle, etc. They can be used in other ways, not for this dish. Cleaned, soaked and boiled in lightly salted water, added an onion and a bay leaf.
You can eat it hot, too. But for me it tastes better the old classic: it has to cool down completely. I take a tasty mayonnaise and add a clove of garlic to it, through a garlic clove. Who likes it, you can have more garlic. I don't add pepper, that's to a person's liking.
Then just slice the boiled tongue very thinly and put it on a plate. I decorate it with greens, this dish looks marvelous, but more importantly, it is very delicious.
