Mushroom cap (verpa bohemica) the first mushroom of spring

We have had the first spring mushrooms, morels caps and conical or common morels, for several weeks now. I have been waiting for these mushrooms, as they are very good. In large cities, restaurant meals are often made with common morels. In the first post, I'll talk about how I cooked the morels cap, and in the next I'll show the hit of restaurant, spring mushrooms, cooking the common morels.

Of course, the more valuable is the common morels, but the morel mushroom cap is also a wonderful mushroom, we have seen it again today.

If you buy these mushrooms, it is important to know that they are safe. You can check this to a certain extent if you buy from trusted people. First, I will tell you about the morel mushroom cap. Why such a name, if you take the mushroom by the cap and with the other hand by its leg, the cap is easily removed. In the case of this mushroom, it's a good idea to separate all the caps from the stalks and cook them separately. This is not necessary, I did so this time, realizing it would be prettier and tastier that way.

After separating, they are rinsed carefully under running water, in several waters. And before that, it is better for them to stand in cold water for 15 minutes.
Then I separately boil caps and legs for 20 minutes, wash them and they are ready for further cooking. You can fry, bake in a pot, stew, boil soup.

Did not say one thing, the smell of mushrooms manifests itself when cooking them. Common morels have a much more pleasant smell. But the most fragrant of these mushrooms in dried form, it's just a bomb, their smell.

In my case, I first sauteed the onion in a pan, then added the caps and fried them. Then lightly salted them and at the end I added sour cream and a little butter. It was just super, it turned out very tasty.

Then for dinner I cooked the shanks, only at the end I added garlic to them and stewed for a couple of minutes. The result is very tasty. Tomorrow we will cook a restaurant mushroom, the common morel mushroom. I have it boiled, tomorrow I will decide how to cook it.
