Spring vitamin salad

When it comes to spring and cooking, a severe vitamin deficiency for many of us becomes evident. Among the available vegetables there is not much to go around. For example, cauliflower costs 150 UAH per kg. Broccoli for 180 UAH per kg. An ordinary onion costs 55 UAH per kg. Well, what can I say here, the situation in our country has played its role. Im glad that Kherson is back and its encouraging for good reason, because this region is very important for the whole country, it`s the biggest granary for vegetables in our country and not only.
I have already written that I grow Pasternak myself, it is an incomparable root vegetable. I will not repeat now, believe me it is a miracle of benefits and elements and vitamins. I decided to leave some of my parsnips in the ground, knowing that they will come in handy in the spring. Since it will be fresh and juicy. And so it happened, today I dug only 2 bundles, put the greens away, and my wife washed the roots. They are fresh, just the bomb. At the market it was sold all winter for 150 UAH per kg. And now it is even more expensive. But my Pasternak straight from the garden, fresh, such now do not buy.
What kind of salad I cooked? Boiled three eggs, grated my parsnips and carrots on a grater for Korean carrots, chopped a lot of home parsley, some of the parsnips chopped finely. Chopped the eggs like for a salad, salted a little, mixed it all up, look how beautiful it is. It tasted delicious. My wife anointed the salad with olive oil my daughter and I with sunflower oil, we do not like olive oil).
The salad is just a vitamin bomb, live peacefully, happily, dear colleagues. There are so many beautiful things in life, it is a pity that there is no peace and understanding. But we hope that everything will change for the better. Good luck to all!
