Hi folks, hope everyone is doing fine. I am back with another exciting recipe. Since my childhood, I have always been a big fan of vegetables and eggplant is my favorite one. Eggplant is a great source of vitamin and minerals. It can help with digestion, prevent cancer or heart health. So I thought why not share one of my favorite dish with this great community. It is a simple recipe with less work. , but can make you full for next 4-5 hours. So lets jump into the process and the ingredients needed.
Ingredients
- Eggplant
- Green chili pepper
- Onion
- Garlic
- Tomato
- Rice
- Turmeric powder and Cumin powder
Process
- First, we will have to chop the onion, garlic, and green chili as shown below picture:
We also have to slice the eggplant like this :
Then we will mix some turmeric and cumin powder with these slices and fry with oil for 5-7minutes until they turn brown.
- Next step is frying onion, garlic and green chili with oil for 2-3 minutes before mixing same spices with them.
- After frying them for 2-4minutes, we can add fried eggplant slices with them. Then we can cook for another 2-3 minutes and our eggplant is ready to be served.
I usually eat these fried eggplant with hot rice. Sometimes I add fresh tomato slices as well.
