To day I would like to share my quick and easy recipe, "Curry Mince", with you.
I make this on days when life is a bit hectic and there are hungry mouths to feed in a hurry.
it's easy, quick and filling at the same time; So, lets get started.
Recipe
I Large Onion
3 Cloves Garlic
4 Curry leaves
4 large potatoes cut in 4 squares
1 small piece Ginger
hand full of Coriander
1Kg Beef mince
1 Cup Peas (preference)
Salt and Pepper to taste
3 Table spoons curry powder
4 Small carrots chopped
Little oil to fry onions

Sauté the onions in a little oil, any oil you prefer, until transparent almost turning brown.
Add mince fry for around 2 minutes, add garlic, ginger, carrots and coriander and curry leaves, for another 2 minutes.
add curry powder stir and add the potatoes; add water to just cover the potatoes.
You can add peas if you like, I do , I love peas.

Simmer until potatoes are cooked then turn heat off; serve with fluffy rice of your choice.
Banana and milk salad is very nice to tame the heat of the curry, a little "Mrs Balls Chutney and a little bit of coriander sprinkled on the top, adds to the flavor, depending on your taste buds.
