Today I am with traditional India-Kerala dessert which is normally served in festive season like "Onam".
It is popular in all over India, there is a different varieties of "Payasam " and I select "Wheat Payasam" to share with you.Hey guys #hive
INGREDIENTS
Jaggery - 2kg
Wheat - 2kg
Milk - 2 L
Cardamom - 30gm
Ghee - 20gm
Cashew - 50gm
Raisins - 50gm
Water
PREPARATION
Make jaggery syrup by heating the solid jaggery cubes in a little hot water, boil and stir continuously until it became syrup. It is added to give the dessert sweetness.
Boil the milk.
In another big pan cook the wheat with adequate amount of water, for 2kg wheat about 1.5L water.
When it became cooked well and check the hardness of wheat. It wan to be soft.
After the wheat cooked pour the jaggery syrup to the wheat, and all our ingredients will be added to the wheat step by step.
Stir them continuously otherwise it can be stick to bottom of the pan. Never stops stirring until the jaggery became stick to the wheat and the colour changes to dark.
When the mix became dark in colour add the boiled milk to it.
Add the crushed cardamoms.
Stir them well. Check the taste, if the sweetness is low add some more jaggery syrup. When it comes to boil continue it for some times and reduce the fire. Keep them in hot temp. After garnish remove it from the fire.
In another hot pan we have make the cashew and raisins for garnish. Pour the ghee in the pan.
Fry the cashews in ghee.
Fry the cashews to a brown colour and remove.
Fry the raisins in the same ghee.
When the raisins became swollen remove them.
Garnish the paysam with fried cashew and raisins.
Our wheat payasam became ready, serve hot.
