There are many types of food in this world, originating from various countries and various regions on earth. Usually, many foods that are identical to the traditions of a country and region of origin, cannot even be separated. It is said that food comes from the many commodities that exist in a country, for example in Indonesia, a lot of food is made from rice, because in the past rice was the most common commodity in Indonesia, as well as spices, there is no type of food that does not have a spice taste.

Pandan bolu is almost the same as sponge cake, the only difference is that you give pandan leaf juice and coconut milk to make it taste more fat and the aroma is so thick. The aroma of pandan is very pleasant and the taste of coconut milk makes it soft on the tongue. This pandan bolu has a texture similar to sponge cake, but the taste is very different.

Ingredients:
- 4 eggs
- 1 teaspoon emulsifier (I using SP)
- 200 gr sugar
- 200 gr wheat flour (bread flour)
- 1 teaspoon of baking powder
- 1 teaspoon pandan essence (I use essence to make it easier)
- 65 ml of instant coconut milk
- 50 ml vegetable oil
- A little salt
- Almond flakes
How to make pandan sponge:
- Enter 4 eggs, emulsifier and 200 grams of sugar into a bowl mixer, beat with a mixer until it expands 3 times.
- Combine instant coconut milk and essence and mix well.
- Put the flour, baking powder and salt into the bowl, then add the vegetable oil. Stir gently so that all the ingredients dissolve easily. After that, add the coconut milk and stir again until the green color is perfectly evenly distributed.
- Before the dough is put into the oven, preheat the oven to 180 degrees Celsius for 15 minutes.
- Cut the parchment paper and place it on the bottom of the baking pan. I used a rectangular pan. Then pour all the dough into the pan.
- Sprinkle almond flakes on top of the dough, this is only optional, you can use meses or other nuts.
- Put the baking sheet and dough into the oven, then bake at a temperature of 150 degrees Celsius for 25-30 minutes.
- Pandan cake is ready to be served.
