Welcome to my kitchen; I Hope we are all doing well, food lovers; today, I made red tomato stew with Chicken.
There are different ways to cook this type of stew in other to get different types of tastes too, you can decide to roast the tomatoes a bit before blending, boil it to drain out water before blending it, you ca as well decide to dice it into cubes, all the style results to different tastes and different aroma.
Likewise, the chicken, you can decide to boil and fry it, you can decide to grill it, you can also just boil it and add it to the stew; the different styles of cooking give different tastes.
Join me lets cook my stew in the style of my choice.
First thing first, let's check out our ingredients and their quantity.
- One full chicken (4kg)
- One custard paint of red fresh tomatoes (4kg)
- 2.5kg of red pepper
- One Maggi knor
- One spicity (spice)
- One Benny (Chicken flavor)
- Five sticks of curry leaf
- One sachet of curry spice
- 300mls of soya oil
- A spoonful of salt
- Five dry prawn
- Two big balls of onions.
Let's move to cooking.
Step 1.
I defrosted the fresh tomatoes and pepper and washed them thoroughly and started blending them with my blender.
Blending them all took me about 20 minutes, then I poured the blended tomatoes into a pot and started cooking to drain water.
The tomatoes cooked for 20 to 35 minutes, and all the water dried up; let's move to the second step 🪜.
Step 2.
The chicken was processed in the market where I bought it, so all I did was wash it thoroughly and then marinate it with curry powder, curry leaf, one big onion, salt, and one cube of knorr chicken, I also added dry pepper to make it more spicy 🔥.
After 10 minutes, the chicken is ready for boiling because I am not frying it, nor am I grilling; I want to have the taste of a boiled chicken in my stew.
I allowed the chicken to cook for 45mins, I allowed it to cook so long because I wanted it to be very soft and easy to eat.
Step 3
I separated the boiled chicken from the stock, most times I keep some leftover stock for some fast food like indomie.
Then I placed a washed pot allowed it to dry and added the soya oil, after just some seconds I added the sliced onions, then the tomatoes, and I stirred it very well.
Step 4
I added the boiled chicken and stirred it very well , after 5 minutes I poured in just one cup of the chicken stock.
I allowed it to cook for 30 minutes, I love it when my stew looks dry and thick not watery, so I added salt for taste.
Step 5
My Nigerian Red tomato stew is ready.
Then I already had boiled rice, I served the stew with boiled with rice.
That was how I finished my cooking, I have little kitchen space so I did most of my preparation in my room.
