Hoy he tenido la natural intención de compartir una de mis recetas de comida que más me gusta preparar para la familia, se trata de la sopa de lagarto de res; su aporte calórico y vitamínico es beneficioso para el organismo, además de su aporte nutricional el caldo de res es exquisito y de fácil preparación. Probablemente, la acostumbras a comer esta sopa, veremos si la haces igual a mí, será divertido conocer tu opinión. La hice así :
Today I had the natural intention of sharing one of my favorite recipes that I like to prepare for the family, it is the beef lizard soup; its caloric and vitamin contribution is beneficial for the body, besides its nutritional contribution, the beef broth is delicious and easy to prepare. Probably, you are used to eat this soup, let's see if you make it like me, it will be fun to know your opinion. I made it like this:
- 2 kilos de lagarto de res,
- 2½ kilos de verduras,
- 4½ litros de agua potable,
- 1 cebolla grande,
- 7 ajíes dulces,
- 1 cabeza de ajo,
- 5 gramos de orégano,
- 1 pimentón verde,
- 25 gramos de sal,
- 2 kilos of beef lizard,
- 2½ kilos of vegetables,
- 4½ liters of drinking water,
- 1 big onion,
- 7 sweet peppers,
- 1 head of garlic,
- 5 grams of oregano,
- 1 green pepper,
- 25 grams of salt.
Lavado y corte de la carne y vegetales. La carne es marinada con suficiente sal y ajo, se deja en un envase por 15 minutos tapada antes de llevar a la olla de presión con el agua y ¼ parte de los vegetales.
Washing and cutting the meat and vegetables. The meat is marinated with enough salt and garlic, left in a container for 15 minutes covered before being taken to the pressure cooker with the water and ¼ part of the vegetables.
Ahora se prepara la olla de presión con el agua y añade el lagarto que, como puedes observar es una proteína de color púrpura con notable nervadura y hueso con tuétanos; se recomienda la olla de presión porque esta parte del bovino es un poco dura, aunque concentra gran sabor y valiosas propiedades nutricionales. Antes de colocar la tapa y llevar al fuego por 30 minutos, agregue una ¼ parte de los vegetales para que se obtenga un caldo con mucho sabor.

When it has reached the programmed time in the pressure cooker, lower the heat and release the steam, being careful to avoid accidents. It is necessary to check the meat to see if it is soft enough to proceed to add the vegetables.
Al asegurarse que la carne está en su punto de cocción deseada, se añade el resto de los aliños picados y agrega la verdura. Se deja cocinar por 20 minutos más y luego se retira del fuego.
Once the meat is cooked to the desired doneness, add the rest of the chopped seasonings and add the vegetables. Let it cook for 20 minutes more and then remove from the heat.
