Blueberry and Lavander Cookies

Blueberries and lavender are sure a match made in heaven. The cookies are soft and not dry at all, but rather a bit chewy. The flavors compliment each other, giving us a taste of summer. It's not summer here yet, but I found some blueberries at the store and I still have loads of lavender flowers to use, from the last season.
My cookies didn't come out as purple and vibrant, as those on famous TikTok videos. I wonder if I should use food coloring to get the same effect. Anyway, these cookies are delicious.

Ingredients:

  • 95 g of margarine (room temperature)
  • 70 g of sugar
  • 100 g of blueberries
  • 170 g of all-purpose flour
  • ½ teaspoon of baking powder
  • ¼ teaspoon of sea salt
  • 1 tablespoon of dried lavender flowers
  • 80 g of dark chocolate

Preparation:

  1. Beat the margarine with an electric mixer. Add sugar and mix until creamy.
  2. Add blueberries and mix at slow speed for a few minutes.
  3. Sift flour and baking powder through the sieve into another bowl. Add sea salt and lavender flowers. Mix dry ingredients together.IMG_20220310_145807.jpg
  4. Add dry ingredients and form a dough with your hand or with an electric mixer.

  5. Cut the chocolate into small pieces and add them to the dough. Knead until well incorporated.IMG_20220310_150822.jpg
  6. Place the dough in the freezer for 30 minutes.
  7. Scoop the dough out of the bowl with a spoon. Place the scoops on a baking tray.

  8. Bake cookies for 10 minutes at 200°C. IMG_20220310_163110.jpg
    After baking let them cool a bit on a tray, then transfer them on a cooling rack.

The recipe is really nice, I found it on the internet I only added lavender as I like it to combinate with blueberries.

The taste is a lot like blueberries and a bit of chocolaty-lavender.
I like the cookies because they aren't dry, I will use fresh fruits more in the cookies, from now on.

Really? Blueberries and lavender? That is a combination I never would've thought of. Ah but then you pop in chocolate and ANYTHING will taste delicious. Ok. Almost anything. Either way. Your cookies are, as always, @blackberryskunk, inspiring perfection!

I really like the combination but I wouldn't put too much of lavender inside. Also not all the lavender taste the same, I like the kind that has a mild taste. Of course, anything with chocolate taste great.
