Coffee muffins are very simple to make and they are delicious when there's a jam in the middle and dried fruits on top. To make this recipe a bit special, I added streusel on the top of the cupcakes.
I like to add streusel on the top of many desserts or baked fruits.
Ingredients for the streusel:
- 55 g of margarine
- 30 g of sugar
- 85 g of all-purpose flour
- 50 g of dry cranberry
Ingredients for the cupcakes:
- 2 flax eggs (2 tablespoons of ground flax seeds and 5 tablespoons of water)
- 210 ml of Turkish coffee (or instant coffee)
- 80 g of sugar
- 60 ml of canola oil
- 1 teaspoon of vanilla extract
- 210 g of all-purpose flour
- 1 tablespoon of mandarin spice
- 1½ teaspoon of baking powder
- ¼ teaspoon of baking soda
- ¼ teaspoon of sea salt
- 2 teaspoons of apple cider vinegar
- 100 ml of cranberry jam
Preparation:
- First we need to prepare the streusel. Place dried cranberries into a cup and cover it with hot water for 5 minutes.
- Sift the flour into a bowl. Add sugar to it and mix it with the flour.
Cut the refrigerated margarine into small cubes and add it to the bowl.
Use a fork to incorporate it together.
- Drain cranberries well and add them to the streusel.
- Mix ground flax seed and water in a small cup and let it sit for a few minutes.
- Cook 210 ml of strong Turkish coffee and let the coffee grounds sit on the bottom. Pour it into a cup to get rid of the coffee grounds and let it cool down.
- Sift the flour, baking powder and baking soda through the sieve into a bowl.
Add sea salt and mandarin spice and mix it together.
- In an electric mixer bowl, mix all the wet ingredients: coffee, canola oil, apple cider vinegar, vanilla extract and flax eggs.
- Add sugar and mix it with an electric mixer, until the sugar dissolves.
Start adding dry ingredients to the wet ingredients, spoon by spoon. Don't overmix it. - Grease muffin ramekins and lightly dust it with flour.
Pour a tablespoon of muffin batter into to each ramekin.
On top of that add a teaspoon of cranberry jam.
Add another tablespoon of muffin batter into each.
- Add streusel on top of each muffin.
- Place in the hot oven at 180°C for 20-25 minutes.
Dust it with powdered sugar.
These cupcakes are really awesome, look so good and perfect for a nice afternoon with friends.
