Sunshine salad with mango tangerine dressing for heatwave hydration

A heatwave came around in Montreal and I would be one of the few people that are thankful for this. Many people are struggling and panicked if they are breaking a sweat. My mother in-law is someone who has a hard time.

The other day I walked to a store that was fairly far away. When I came back she said I was crazy and that I should have gotten a ride in this heat.

I told her that I could easily jog if I had proper shoes. I told her it's not a problem because I am hydrated.

She thinks that coke and juice from concentrate are ways to hydrate. She never drinks water and says she never ever did. She takes her blood pressure pills with juice. If she eats fruit, it's only melon once in a while or berries with whipped cream. Even fruit is rare. I have seen her eat a salad in small amounts with store bought cheap dressing, along side a fried pork chop.

Well there is nothing we can do to help and our examples don't work. They think that chewing for a long time on salad is a waste of time and boring.

We have some greens now from the garden, kale and romaine so I made a salad with it along with as many things that were left in the fridge.

I had a ripe mango that I was going to chop to put in but it was too ripe so I turned it into a dressing. I like a dressing that is tart and sweet so mango is perfect. To make it creamy I added cashews. Sometimes I soak them first but there was no time for that. They were fine anyway.

Mango tangerine dressing

1 ripe mango
juice of 2 tangerines
juice of 1 lime
1/4 cup cashews
2 tablespoons olive oil
1 clove garlic
1/teaspoon minced ginger
salt to taste

I used to get store bought dressings all the time but than I realized you can save money and also avoid all of the extra ingredients that are used to preserve the dressings. If they are organic they are costly so why not make my own in smaller amounts as I need it.

Salad ingredients
Romaine from the garden, kale from the garden, baby spinach, carrots, cucumber, tomato, red onion, tangerines, walnuts, sultana raisins, sunflower seeds, and fresh chives, basil, and oregano from the garden.

Often people say that salad doesn't fill you up and they want more food. I think if there is a good variety of good stuff in it and leafy greens along with nuts and seeds, you will not only be full but you'll feel much more nourished than if you eat a burger, however I like my veggie burgers and I will never stop eating them.

Who (besides your in-laws) would turn down such a cheerful name as 'Sunshine Salad?' 🌞 Your homemade Mango Tangerine Dressing sounds absolutely wonderful! 😋

Salads always make me think of my late-husband. He and I loved salads, and he actually liked chopping veggies! We enjoyed cooking together (although I did most of it, but he often helped) and it was a lot of fun! 😊

I just love that thought of you chopping veggies with your husband. That is a lovely memory.

Looks so beautiful salad and delicious! Well done my friend. I love cashew very much but here not have in the store. I miss eat it.

Thank you but cashews are expensive here so we cannot always have them.

I know it’s expensive, in my country 1 kilo 8 - 10 $, I think it’s not expensive. I seen cashews when I come here first, it’s very expensive 100 grams 3$ and its have somewhere, near my house not have.

Actually I didn't make it to Chiang Mai. I went south to Krabi. I really regret not going up there though. I need to go now for the signature dressing.😊
