Hi foodies..It's been more than a week since I not made a post in this community, yes I've been busy with various activities. Today I will share traditional food recipes.
This morning I went shopping to the market accompanied by my husband.After walking around and looking at various foods and vegetables which are sold, we briefly discussed what dishes we will cook today.
We decided to cook eggplant combined with anchovies. This is a new menu that we have never tried before.
THE MAIN INGREDIENT;
Anchovies 250 gr.
2 purple eggplants.
4 green chilies.
200 ml thick coconut milk.
GROUND SPICES;
Red chilies 4 pieces.
Cayenne pepper 20 pieces.
Starfruit acid 3 pieces.
Red onion 5 cloves.
Garlic 1 clove.
Ginger 1 segment.
Salt to taste.
Clean the anchovies and remove the head, so the taste isn't bitter. You can add a little lime juice to make the fishy smell disappear. But if you have lemon 🍋 that's even better.
Then wash the eggplant and peel the skin, cut into small pieces or according to your taste.
For ground spices, you can grind it in a blender or grind it manually, but if you use a blender, the texture will be smoother and the results will be more perfect.
I prefer it in a blender because if you grind it it can make your hands sore.💪
LET'S COOK
Turn on the stove, heat the pan and pour in a little oil. Then add the ground spices, stir-fry briefly until the aroma is fragrant.
Add the anchovy, wait 2 minutes then add the eggplant. After that, pour in the thick coconut milk and stir.
Add a little salt and add the green chilies that have been split into two parts. Wait about 5 minutes then remove, and ready to serve.
This is the final result.
Enjoy.
This menu is perfect for serving lunch or dinner, to complete your lunch, just add a plate of white rice. The taste is very good and delicious. But if you don't like spicy food, you can reduce the amount of cayenne pepper, according to your needs.
