LET’S COOK - NIGERIAN COCONUT RICE

Hello everyone,
I hope this post meets you in good spirits. In today’s blog post, I present to you, a generic version of how we cook coconut rice in my country, Nigeria. It is easy and delicious. You can play with the ingredients; all that matters is that you enjoy the final out come.

Ingredients
Coconut Milk/Powder
Rice (I used whole grain)
Groundnut oil
Onions
Small yellow peppers
Red peppers
Half satchet of tomatoe paste
Cow meat
Dried catfish
Ground crayfish
Curry powder
Ginger powder
Salt
Seasoning cubes

First Step:
Start by blending your yellow and red peppers, the half satchet of tomato paste and onions.

In a separate pot, boil you’re meat and dried catfish with onions, seasoning cubes, curry powder and salt.

While cooks, heat the groundnut oil in a pot and the pour in your pepper mix. Make sure your kitchen is ventilated because it chokes.

When cook until the water dries up.

I used coconut powder so I had to mix it in warm first before adding to my pepper mix.

The next step is adding the meat/fish stock into the pot. Allow it boil before adding your rice.

Add your crayfish, salt and seasoning powder. Stir properly.

I use a foil to cover the pot so the heat can circulate. Once the rice becomes tender, switch off your stove.

FOOD IS READY!!!

You can serve with coleslaw, plantains or plain do old salad.

I took this picture the next morning. I added some peas and green beans. I used a boiled egg as my protein for the day.
