In this new opportunity I have been encouraged to make cachapas, I have never made them, that was a task of my grandmother💛. But now it's time to learn, because among so many foods that can be made from corn, this is one more delicacy worth trying, I assure you😉.
When I was closer to my grandmother and long before I lived alone, I used to watch and follow the process in the preparation of this dish from its starting point, that is, from the planting and harvesting of corn when it was in the right place, to the preparation of the cachapa. It was a dish that seasonally was not lacking, once the corn was tender, the wait would be over, and that was a reason for joy, it was time to harvest, to get down to work, shelling the jojotos and grinding the corn; to later prepare the dough and be part of eating. Sometimes I think that some meals teach us to be together, to unite a little more.
Living certain processes up close until we see the results can become something with great meaning for us. Because with time some activities take on a great value, for all that is lived and felt in them.
Today, the preparation of my cachapas is shorter because sometimes there are people who facilitate certain things for us, like the one who sows the corn and sells the dough already ready, just by adding certain ingredients, an option that for those who do not have time, space and >possibilities to carry out the whole process, it is very good for them. And so it happens with many other things, somehow we all create a little space for ourselves.
So, I opted for that option and got the dough; and to prepare it I needed the following:
INGREDIENTES | INGREDIENTS |
---|---|
500g de masa para cachapas | 500g of dough for cachapas |
Una pizca de sal | A pinch of salt |
¾ de taza de leche | ¾ cup of milk |
¼ de taza de azúcar | ¼ cup sugar |
Queso blanco | White cheese |
Mantequilla | Butter |
I faithfully believe that everyone has their own way of preparing cachapas, for example, some people add an egg to the mixture, others, wheat flour or bread flour, but there are also those of us who do not add those ingredients, and I consider all of this to be very valid.
There is also variety in terms of filling, since once ready, these can be accompanied with shredded meat in addition to cheese, or with cheeses such as, for example; guayanes cheese, or hand cheese, which GOD!😱 is a delight...in my case, I have used white cheese for grating that also goes very well.
The preparation is not very complicated, at least it does not seem so. Once I placed the corn dough in a deep bowl, I added the milk and stirred it with a spoon very well, then I added the amount of sugar mentioned above plus a pinch of salt and continued mixing everything.
To make these cachapas I placed a pan to heat and added oil to prevent the mixture from sticking to the surface. It is very important to wait until it has heated up well, as this also avoids damaging the cachapa when trying to flip it. I waited long enough and put it in, then when I noticed that it had cooked well I flipped it over without any problems.
Finally, I put butter on it, I like to put enough, I feel it tastes richer that way and I also sliced cheese to fill and fold, I like it that way. And I must say that today's attempt has been a success 😎💫.
There are meals that taste of memories, of togetherness, of laughter, of closeness, of times when we grew up; whose aroma is a trip to small moments of happiness.
