The baking has begun! It is Aime's birthday today and my birthday is on the 2nd of March. For my cupcakes, I'm gong to try something completely different: Jam donut cupcakes dipped in butter and cinnamon sugar!
But for @aimeludick I was planning surprise stuffed cupcakes.
I must admit it was a very tough decision as to what exactly I was going to stuff the vanilla cupcakes with - Aime adores my vanilla cupcakes but I wanted to make them extra special - so I was stuck between hollowing them out and piping in caramel treat, or a batch of chocolate icing. I settled on something I've never tried and let me tell you, it was way more of a mission than I thought.
So, I decided on Cadbury's caramel chocolate. Which is basically milk chocolate filled with delicious caramel. I thought it would be easy enough to, you know, just pop them in, but melting chocolate requires patience and the right temperature and I made a giant mess figuring that out.
I am so glad I made so many cupcakes ππ
We choped them into individual pieces, carefully not to break the chocolate seal and they turned out to be JUST the right size! I ended up using four bars of chocolate and of course between @merenludick, @matthew-williams and @aimeludick, we efficiently gobbled the remaining pieces ππ€£ you know, as they say... "waste not, want not".
So I discovered that pushing them in right at the end, like minutes before the cupcakes were ready, didn't work at all.
Completely Raw CupcakesSo I dialed back the time and with each tray (I an only bake one at a time anyway since the big oven is till broken @zakludick nudgenudgewinkwink) I tried to add the chocolate at an earlier stage. I didn't want to add the chocolate right at the beginning as I knew it would just sink to the bottom of this already very runny batter.
It turned out that the best cupcakes were the ones that were still in lava form. They had just begun to rise and had already formed a sealed layer on top which i discovered through trial and error, that I would need to gently make an incision into rather than just shoving the chocolate in which used batter to go absolutely everywhere.
So, although they looked pretty hideous and will need some work to cut off unsightly edges (which @zakludick will certainly help me "dispose of"π) to make them look pretty enough for icing (thank God icing covers up a lot)
As for the other 36 cupcakes (I made 48 in total), I'm going to have to make another batch of vanilla batter to try to cover them with a layer of batter and give them a quick bake to see if I can get the chocolate to melt. It should work... like in theory...
