Yesterday, guests came to our house and my mom had me busy dealing with them the entire day. Right after they left, I realized I barely ate much, so I managed to grab whatever she had on stock, grabbing so- 1. me frozen meat, and made a Thai noodles delicacy.
Easy food to make in a hurry, though it took me a little longer than 30 minutes to get this prepped, honestly the noodles pack I have does provide seasoning with a pack, anyone can just boil it, then pan fry with oil with the seasoning added, and just have at it at their leisure. Me, I kind of like to go a long way, so took vegetables from the panty, and did some chopping.
I kind of wish more tomatoes were left, but I got a measly cut half, I guess it'll do. So the ingredients as followed:
- 30ml of canola oil, at medium to low heat
- 20ml of oyster sauce
- Half cut tomato
- Small batch of coriander leaves
- Quarter of a lemon(that's for later)
- Some garlic
- A chicken kofta ball
- Two small onions
- Lastly, some chicken nuggets
Should have added some turmeric, but I thought making a quick dinner was all there needed to be. It is possible to put in other seasoning like black pepper, paprika, chili flakes, maybe some sesame oil.
The noodles need to be boiled, always add extra water just in case it takes longer to get all the ingredients cooked. Then some salt in it to maintain texture and remove stickiness.
Now you throw the cut onions, tomatoes, split the garlics along as well with the oil. Then the rest along, throwing in some oyster sauce too. The kofta is unfrozen so, should be able to break it into little pieces. Once the onions caramelized, I added the egg. I think it would be better to mix the yolk with the white together for an omelette, but I put in last minute, mixed and let it all sear.
Finally, everything's coming together. The noodle should be boiled around the 15 minute or so mark. Once that's done, remove the leftover water, and then just wash the heated noodles before putting it in the pan along with the rest. Mix, and mash.
Then close the lid, and cook in low heat. Just 2 more minutes in there, and it's good to chow on. Oh, I almost to mention the nuggets. I just fried three pieces with more canola oil separately.
I apologize for the camera, and dirty kitchen in advance, my mom got very busy, and we had little time to clean. This was worth it, the onions and egg go well, adding to the savory taste and sizzling flavor from the seasoning pack. Nuggets weren't bad either.
More variety from the coriander, and kofta mix as well. The noodles were soft, the lemon helped to add a bit of tangy flavor and to eat through the excess oil, grease.
It is a lot easier than it looks, just remember you can add more seasonings to enrich the noodles. I'm planning to make more home food in the future.
