Healthy quinoa hand roll
A while ago I've bought seaweed sheets. Normally they're used to make sushi handrolls. But since I can't eat rice I needed to find another way to make hand rolls (Temaki in the Japanse cuisine). So I decided to try to make them with quinoa instead of rice.
- Prepare the quinoa according to the package instructions, and let it cool down.
- Make a mixture of mayonaise, wasabi and some natural yoghurt.
- Mix the sauce with the quinoa so it will stick together.
- I used smoked salmon, but you can also use fresh fish (sushi quality).
- I a perfect world I would add some slices of avocado, but at the moment it's not the season.
- On my balcony I grow some herbs and veggies. The petchay was ready and also some sprouts.
- You see, this is a very easy recipe, extremely tasteful and most important: soooooo healthy (if you don't use too much mayonaise).
- Place the quinoa on the left side of the sheet. Add the filling on top of the quinoa in a diagonal way.
- Now fold the left bottom corner over into a conical shape.
Another version I tried was replacing the salmon with pastrami. Totally different but I really liked it. As always, use your imagination to make new creations. You will discover amazing tasted if you're willing to go off the beaten track!
