After doing some reading about bread recipes I remembered some delicious olive bread I tried so I thought I would try and recreate a similar recipe.
Prices for everything in Canada are going through the roof and you can easily be expected to pay $2 - $3 for a plain loaf of bread and if you want something special like olive or cheese bread expect to pay twice that or more.
I'm not buying bread anymore! It's too easy to make. Before it seemed like too much work and using the large oven didn't seem totally efficient for cooking one loaf of bread but now that I've gotten used to doing just about everything in my toaster oven it couldn't be easier.
I'm going to modify my usual dough recipe and see how it turns out by removing the sugar. As it turned out the dough rose up at the same rate as with the sugar.
1 cup water (lukewarm)
1 tsp yeast
1-2 tbsp oil (olive oil would be great but any oil)
1/2 tsp salt
2-1/2 to 2- 3/4 cup flour
1/2 cup chopped olives
1-2 tbsp cheese (optional)
Put everything in except the olives and mix for 5 minutes then add the olives and mix for a few more minutes.
Leave the dough for 2 hours to rise somewhere warm. Put it on the baking sheet and shape and then let rise for another 30 minutes to an hour.
I used my stovetop trick and blasted the heat for 15 seconds and left it on the warm area for the dough to rise. Its grown quite a bit in around half an hour!
I cooked on a baking sheet for 30 minutes at 350 F in my toaster oven.
In all honesty this turned out like white bread with olives in it lol. Still good but not exactly like the expensive and tasty bakery artisan olive bread. I think I could easily double the oil or fat, salt and olives in the recipe to get it closer to the artisan olive bread. I'm going to do that next time and I'll put up a post with the results.

This reminds me of the time when we used to have a bakery (way back in the late 1990s), those were the days. By the way, the bread looks very delicious.
