One-Pot Vegan Potato and Chickpea Curry!

Hello Hivers.

I forgot to post what I made yesterday. It wasn't anything interesting so you didn't miss anything :P I might take few days off here and there if I don't make anything interesting food.
Yesterday was just Rice with Mixed veggies, thats it.

Todays Dinner:

Is a Vegan curry with Potatoes and Chickpeas!


Here’s what I use:


250g of Potatoes
240g of Chickpeas
2 Onions (I will add another next time)
3 Cloves of Garlic
1 small piece of Ginger
80g of Frozen Peas
80g of Frozen Green Beans
3/4 of Alpro Cuisine Soya
1 small can(140g) of Tomato Paste
1 cube of a Veggie Boullion
500ml(300ml would have been enough) of Water


Spices:


Tumeric
Curry
Pepper
Cumin

Not sure on the amounts, I just pour on till I feel its enough :D


Instructions:


First you put a small amount of oil into a Pot heat it up to medium heat and drop your Onions in to the pot. Let the onions sauté for 2 mins, then add Tumeric and Cumin, mix it around for 2 mins or so. Next add in the Garlic and Ginger, let it simmer for 3 mins. Deglaze the bottom of the pot with a small amount of water.
I then add the Tomato Paste and Curry and stired it for 2 mins.

Now you can add 300 - 500 ml of Water, the Cube of Veggie Boullion and your Potatoes (I did cook my Potatoes for 10mins before dumping them into the pot) and let it simmer for 15mins.

After the 15mins, add in your Chickpeas, the Alpro Cuisine Soya and the Peas + the Green Onions
Let it simmer for another 15 mins and it should be ready to eat.

It was a bit too runny for my taste when I added 500ml, thats why I suggest 300ml instead.
