Today for lunch I wanted to prepare a delicious baked chicken accompanied with some scalloped potatoes in the air fryer:
Baked chicken
Preparing a delicious meal doesn't always have to be complicated, and I'm excited to explain to you what my recipe consists of: (in addition to the fresh ingredients and the love with which I cooked)
Ingredients:
- Chicken breasts (enough for five people)
- 1 large onion
- 2 bell peppers (red and green)
- 3 cloves of garlic
- Olive oil
- Black pepper
- Oregano
- Rosemary
- 2 carrots
- Lemon juice
- Ketchup tomato sauce
- Sauce to season meats
- Salt
- Soja
Instructions:
- Prepare the vegetables: Wash the onion, peppers and carrots well, and cut them into thin slices. Chop the garlic into small pieces.
- Marinade the chicken: In a large bowl, mix the chicken breasts with the ketchup, meat seasoning sauce, salt, black pepper, olive oil, rosemary, oregano to taste (I like to add a lot hahaha), and chopped garlic. I let the chicken rest while I finish cutting the vegetables.
- Assembling the dish: On a baking sheet, place a layer of vegetables. Add a little salt, soy sauce and olive oil. Then, arrange the chicken breasts on top and mix everything well.
- Bake: Cover the tray with aluminum foil and bake at 170°C (340°F) for 45 minutes. This will ensure that the chicken and vegetables cook evenly and retain all their juices.
Gratin potatoes in air fryer
I thought that some scalloped potatoes were the ideal accompaniment for chicken, although to be honest, at first I was going to make mashed potatoes... Preparing them in the air fryer is super easy and fast.
Ingredients:
- 8 medium potatoes
- Salt
- Garlic powder
- Sliced gouda cheese
Instructions:
- Cooking the potatoes: Wash the potatoes and boil them until they are soft. This will make the gratin faster and easier.
- Preparation for the air fryer: Once cooked, cut the potatoes in half. Place them in the air fryer and season with salt and garlic powder, you could add a little olive oil, but that is optional. Oh, and don't forget the cheese, it's the special touch for the gratin hahaha.
- Gratin: Cook in the air fryer at 200°C (390°F) for 10 minutes, or until the cheese is well melted and golden.
And that's it, what's left is to serve, or as the chefs would say, "plate", and here you can see what my weak point is, in my defense, I was very hungry and I wanted to try how it turned out... So good , once the chicken and potatoes are ready it is time to eat. You could decorate with a little parsley to add another color to the dish and provide a fresh ingredient.
