Let's make cookies for a snack! 🍪

hello, friends! After a few days off, today I felt like making some cookies for a snack! 🍪✨

Cookies are not my favorite dessert, but they are easy to make. Here’s an important tip: to get the most delicious cookies, you must freeze the dough before baking! 😉

Ingredients:

  • 2 whole eggs + 1 yolk
  • 520g flour
  • 150g chocolate bar of your choice
  • 250g unsalted butter
  • 2g salt
  • 5g baking powder
  • 225g brown sugar
  • 100g white sugar

We'll be using a hand mixer and, of course, our oven.

Instructions:

  1. First, let’s do the mise en place, which means weighing all the ingredients before starting.


  2. Mix the butter with both sugars until creamy. I recommend using a hand mixer for this step—our goal is to create a smooth butter mixture.

  3. Add the 2 whole eggs and the extra yolk, one at a time, beating after each addition to fully incorporate them.


  4. Now, stop using the mixer and start gradually incorporating the flour. This step requires patience because overmixing can activate the gluten, affecting the cookie texture.

  5. Once all the flour is mixed in, add the chocolate, chopped into small pieces. I used a rubber spatula, a key tool in baking and pastry-making.


  6. When the cookie dough is ready, wrap it in plastic wrap and place it in the freezer for at least an hour or until it’s firm. Why? Simply because this helps the dough rest and prevents gluten activation when shaping the cookies by hand.

  7. With these ingredient quantities, we get about 1.5kg of dough. After an hour or more in the freezer, take it out and shape the dough into balls. I weighed each one at 60g. Then, place them back in the freezer for another 15 minutes.


  8. Line a baking tray with parchment paper and arrange the cookie dough balls, leaving enough space between them. Preheat the oven for about 10 minutes, then bake at 180°C (350°F) for 8 minutes.
