MY VERSION OF COOKING CHICKEN AFRITADA

Good day everyone, chicken afritada is a type of Filipino chicken dish with tomato paste or sauce. It's easy to cook and there are many cooking versions on it and for that this is my version or way of cooking chicken afritada.

My version or way of cooking this kind of dish is very simple I only used the ingredient which available only in our pantry and no need to go in the market to buy some ingredient.

1kg. of dressed chicken chopped

2 carrots and 2 potato sliced

1 medium size onion sliced and 5 cloves of garlic sliced

And for this dish I used tomato paste, others used tomato sauce but this is my version and this is my way of cooking chicken afritada. The rest seasoning is for the taste and I only used salt and black pepper.

Start by sauteing garlic and onion in a cooking pot until the onion softens.

In this version I also sauted the tomato paste because I saw some chef do this way, It is because It can help lower down or reduces the acidity taste of the tomato paste and its working, you must try this king of technique.

Then add the chicken followed by 2-3 cups of water, then simmer for at least 15 minutes or until the water reduced and thicken.

And when the water is already reduced or the sauce is already thicken add the sliced carrot and potato and continue simmering it until the its done. Remember to add more broth or water if needed.

Then season it with salt and black pepper to taste and you can add some liquid seasoning if you like or if it is available in your pantry.

I never tried that technique thou, usually I add tomate paste when the chicken is nearly cooked. 😂anyways we have different style of cooking!, good job @deemmosqueda , i must try that technique too.

I only saw that technique in youtube and surprisingly its working..it really reduces the acidity of the tomato paste
