A typical Bolognese dishes | Gnocchi al Ragù 🍲
Hello hivers! Today i want to share with you a delicious lunch my Bolognese friend prepared to me. Potatos Gnocchi with Bolognese sauce which in italian is Gnocchi al Ragù.
Home made pasta is an art that is, unfortunately, disappearing. Young people don't have time and the patience to cultivate this beautiful tradition. It is something really sad that when our granparents will be gone, this will be gone with them.
Fortunatelly, some youngs still find the time, once in a while, to keep this italian tradition alive.
But let's keep to the good part. Today i want to share with you the full recepie of this fabulous dish.
Recepie for** Bolognese sauce** or Ragù
To prepare 500g of Ragu you need:
- 250 g of minced beef meat
- 150 g of minced pork meat
- 30 g of onion
- 50 g of carrots
- 50 g of celery
- 100g of tomato sauce
- white vine (qb)
- Salt (qb)
- Pepper (qb)
- Meat broth (qb)
- Olive oil (qb)
- Milk (qb)
In case you want the light version, or you don't eat pork, you can only use beef meat.
Step 1
Cut in small cubes onion, celery and carrots and put them in the pan to brown with olive oil.
Step 2
When the vegetables starts getting brownish add the pork and beef meat.
Let it release all the juice it has (almost 5 minutes)
Step 3
Vanish the meat with white wine and let it evaporates completely.
Step 4
Add the tomato sauce and mix for 2 '. Cover the meat flush with the broth and half a glass of milk. Cook for about 2 hours, 2 hours and 30 ', Add every now and then more broth and adjust with salt and pepper.
Now let's skip to the **Gnocchi **recepie:
To prepare gnocchi for 4/5 people you need:
- 1 kg of potatos (better the old one with a lot of starch and poor of water)
- 300 g of flour 00 type (both soft or hard wheat flour)
- 30 g of onion
- 50 g of carrots
- 50 g of celery
Step 1
Boil the potatos for at least 40 minutes till they are read. You can even put them in the pot with the peal, ii will be removed when you smash them.
Step 2
Prepare an egg and scrambeld it a bit in order to break the yolk. Prepare 300 g of flour on the bench in order to be read to smash the potato in.
Step 3
Smash the potatos in with a smashing potatos tool and start mix the potatos with the flour. Once it is enough mixed but still not completely agglomarate, add the egg that will act as adhesive. Be careful the the dow of gnocchi doesn't need to be knead a lot, it is just enough to make aggregate and to have all the ingridient properly mixed. If you knead to much the gnocchi will become hard and gummy.
Step 4
Now, that the dow is ready, you need to take a piece and of it and roll it with to fingers in order to create a small loaf. After that you will cut it in small rectangualr pieces.
Now you job is done!! Both gnocchi and ragù are ready and you just need to cook them. When you put them in boiling water, as soon as they come up the are ready!!
Mix it with the Bolognese sauce and ENJOY😍😍!
