If you are not allergic to yeast try adding it to the dough.
In Italy we use this recipe for the base:
500 gr of flowr
7gr of dry yeast
10gr of olive oil
350ml of room temperature water
8gr of salt
- mix flower and yeast
- mix water and oil
- add (slowly) the water/oil to the flower
- add little by little the salt while mixing
- leave to rest 1 hour at room temperature
this will blow your mind!!! I grand you a perfect result
