Hive Creative Contest: No Bake Mac and Cheese with Crunchy Potato Chips

Hello Hive!

This is probably one of the unhealthiest dinners I made and one of the easiest. Great for those days when you run out of ideas and feel like having a cake for breakfast and crepes for dinner.

I saw this Macaroni and Cheese recipe from Food Wishes created by Chef John and tweaked it slightly to use available ingredients. I like the crunchiness of potato chips topping against the moistness of no-bake mac & cheese.

This recipe is just mind-blowing. Before my daughter was born, I used to make this often whenever my husband was away on long business trips. It's such a guilty treat but perfect for those rainy cold weekend nights in front of a great movie with a warm bowl to keep me company.

Total Prep Time: 50 minutes
Preparation: 30 minutes
Cook Time: 20 minutes
Servings: 2

Ingredients:

For the béchamel sauce

3 cups cold milk
1/4 cup unsalted butter
1/4 cup of all-purpose flour
A small pinch of grated nutmeg
1 teaspoon of dijon mustard
1 teaspoon of cayenne pepper (add more to your liking)
1/4 teaspoon dried thyme
1 1/2 teaspoons of iodized salt
2 cups of grated sharp cheddar cheese
1 cup of grated gruyere or Emmental cheese

1 cup Boiled elbow macaroni in salty water

Potato Cheese Topping
1 bag kettle-style potato chips crushed into crumbs
1/3 cup of finely grated Parmesan cheese
2 tablespoons bread crumbs
1 tablespoon butter

Tools: Medium-Sized Good Quality Sauce Pan, Wire Whisk, Non-stick Skillet, Serving Dish, Wooden Spoon, and a Grater

Instructions:

Boil elbow macaroni in salted water as you would normally prepare them until they are cooked and ready. Set aside.

In a medium-sized saucepan with a thick bottom, prepare the béchamel sauce over low heat by melting the butter and pour the all-purpose flour in when the white foam on the top of the melted butter disappears. Whisk well and this creates a roux and cook it continuously stirring for 5 to 6 minutes.

While whisking slowly, add the cold milk. Continue stirring. Add dijon mustard, cayenne pepper, dried thyme, salt, and lastly the grated nutmeg.

Once the sauce starts bubbling, it thickens and that's when you know it is ready. Here's the video recipe of the white sauce if you want to see how it is cooked.

Combine the grated cheddar cheese and gruyere cheese until they are completed melted.

Blend the cheese sauce well into the boiled macaroni. Mix them gently but thoroughly until each macaroni is coated with this cheesy goodness.

Now for the topping. I used a wooden rolling pin to smash the potato chips while they're safely inside the bag. Over medium heat, mix and cook potato chip crumbs, bread crumbs, parmesan cheese, and butter in a skillet until they're golden brown and set aside.

Top it with crushed potato chips.

Mouth-watering! I loved it, it is unhealthy but sometimes eating such food makes life fun. Can we use cheese slices which are easily available instead of grated cheddar? will it taste good too? just wanted to try this recipe this weekend, watching scorpion on prime :p

Hi @praditya, I haven't tried using the sandwich-type cheddar cheese slices, perhaps, it's possible as long as you cut them into small pieces and allow them to melt with the white sauce. Happy cooking this weekend and enjoy watching Scorpion. 😀

Oh, wow! A quick and easy meal to prepare indeed! This is what I usually eat for breakfast in the U.S. when in a hurry. Simple but delicious!

That's a hearty meal packed with energy for a day at the office. I'm quite curious about your life in the U.S., how it was like. Will chat with you about that in private, hehe.

A girl can indulge now and then so why not! Sounds very comforting, creamy and crunchy all in one bowl; guess how I'll be making my Mac & Cheese next time and should anyone complain about all the carbs, I'll give them a bowl of salad leaves;)
