I wouldn't complain about the amount of fat, to me, it looks decent, and you know that a lot of the taste comes from the fat. Well done Mister Bozz!
Ah, good points! I am sorry that I phrased it like that :) It was pretty fantastic. It actually has me excited to smoke the rest of that pork shoulder when I have the time this summer.
