Acehnese Noodles - Indonesian Culinary Specialties with Traditional Spices Mixed with Crab or Shrimp

Hi culinary lovers, friends of foodies be hive wherever you are, this is my first post about food, I am a culinary lover, especially culinary delights from my hometown, namely Aceh, Indonesia. in this post I want to introduce processed food that comes from Aceh, simple but has a very extraordinary taste, so that it makes your tongue shake when eating it, are you curious about the process of making it? let's look at the manufacturing stage.

Previously, I would like to introduce this processed food to you friends of be hive foodies, this food is processed flour, a foodies be hive friend, because basically this food is often served by the people of Aceh. Because in Aceh, this food processing is very typical of culinary lovers, using traditional spices with a blend of selected spices, so that it creates a very extraordinary and appetizing taste.

oh yes, my friend, foodies be hive, this one food is processed food that comes from flour mixed with chicken eggs and a little broth, you know. Here are the complete ingredients for making the basic ingredients of Acehnese Noodles, foodies be hive friends:

  • 250 gr flour
  • 35 gr tapioca flour
  • 2 chicken eggs
  • 1 teaspoon powdered chicken stock
  • 3 tablespoons of onion oil
  • 1 tsp fine salt
  • 40 ml of water

How to make it are:

  1. Combine the flour and tapioca flour, stir until evenly distributed. then mix the eggs and onion oil, stir until blended until everything is mixed, foodies.

  2. Then put the water and powdered chicken broth into the flour mixture that has been stirred with the egg and onion oil earlier. [read step 1]

  3. Then let the dough stand for 20 minutes. Cover the dough container with plastic so that no air gets into the dough. then place the dough on a flat place, then flatten it with a rolling pin. thin the dough little by little while sprinkled with flour so it doesn't stick.

  4. thin the dough according to taste, then print it on the noodle molding machine, don't forget to sprinkle it with wheat flour after it's finished printing until it forms the noodle dough.

  5. Boil the noodles when you want to use them.

So, foodies, how about that? very clear right? If foodies like seafood, then this food preparation is perfect for your mouth, because in general, processed Aceh noodles use crab or shrimp as a complement.

okay friends, foodies be hive, then we will process the noodle dough that we made in the tutorial above to then make a food called Aceh noodles, after the noodles we processed were boiled, then you also have to prepare the processed spices that will later will be used and to get results that are very delicious to enjoy, here I give you directions for the spice mixture:

1. First you have to prepare the spices like the following :

  • 500 grams of noodles made in the first step
  • 150 gr fresh shrimp, peeled and peeled, if you want to use crab, you can too

  • 1 tomato
  • 5 spring onions, thinly sliced
  • 4 garlic cloves, thinly sliced
  • 100 gr white cabbage, finely chopped
  • 100 gr fresh bean sprouts
  • 25 gr green onion, finely sliced

  • 10 gr celery leaves, finely sliced
  • 600 ml of broth
  • 2 tablespoons of sweet soy sauce
  • 2 tablespoons of soy sauce
  • 4 tablespoons of cooking oil

2. Finely grind ingredients such as garlic, shallots, tomatoes and chilies that have been thinly sliced, usually using a grinder, if in Indonesia it is usually called a blender

3. After the spices are ground, heat the oil on top of the skillet, then pour the ground spices into the hot oil, saute until the color turns slightly brown

4. After that, enter the shrimp or crab according to taste, then also enter the bean sprouts, celery and cabbage, stirring until evenly distributed. If you think it is soft then add enough water (if you want to make Acehnese soup) then let it sit so that the spices are absorbed

5. after you taste the spices have absorbed, then enter the processed noodles that we made earlier, let stand for 2 minutes while stirring, then drain, and the Acehnese noodle dish is ready to eat. Don't forget to also serve it with crackers to make it more delicious
