Working in a restaurant has benefits such as, some suppliers offer us their products at wholesale prices. This week, a supplier had just harvested his different types of squash, and together with a colleague we bought a mix from him. Fresh pumpkins, from the field to the table. Few things better than that.
To take advantage of this acquisition I took a zucchini, stuffed it and baked it in the oven.
The novelty in this recipe is the way of preparing the texturized soy to obtain a minced meat replacement. This preparation can be used in any other recipe (bolognese sauce, empanada filling, potato pie, whatever you can think of!...).

Esta semana, un proveedor acababa de cosechar sus distintos tipos de calabaza, y junto con una compañera le compramos un mix. Calabazas frescas, del campo a la mesa. Pocas cosas mejor que eso. Para aprovechar esta adquisición tomé un calabacín, lo rellené y lo cociné al horno. Lo novedoso en esta receta es la forma de preparar la soja texturizada para obtener un reemplazo de carne picada. Esta preparación la puedes usar en cualquier otra receta (salsa bolognesa, relleno de empanadas, pastel de papas, lo que se te ocurra!…) |

1 medium pumpkin. 1/2 cup dried textured soybeans. 1 tbsp cornstarch. 1/2 brown onion. 1/2 purple onion. 1 garlic clove. 1 lemon. Soy sauce. A dash of red wine. Olive oil. Creamy cheese and grated or grated cheese. Condiments: Salt, pepper, sugar, garlic powder, onion powder, smoked paprika | 1 calabaza mediana. 1/2 taza de soja texturizada seca. 1 cda de fécula de maíz. 1/2 cebolla marrón. 1/2 cebolla morada. 1 diente de ajo. 1 limón. Salsa de soja. Un chorrito de vino tinto. Aceite de oliva. Queso cremoso y queso rallado o para rallar. Condimentos: Sal, pimienta, azúcar, ajo en polvo, cebolla en polvo, pimenton ahumado. |

First cut the pumpkin in half, remove the seeds with the help of a spoon and season with salt, pepper, sugar and olive oil. Place in the oven over high heat with a pan of water in the base of the oven to generate steam.

While cooking, first wash the soybeans by placing them in a bowl with a cloth and let the water run for a few minutes.
Then drain it well and hydrate it for about 10 minutes in warm water with a splash of soy sauce and a little lemon juice or a splash of alcohol vinegar.

On the other hand, cut the onion and garlic into small cubes and place in a frying pan over medium heat, season well and sauté until the onion is transparent.

Add the textured soybeans already hydrated and drained with a generous splash of red wine, soy sauce and seasoning. You can add a splash of water and cook until the alcohol evaporates. Finally add a heaping tablespoon of cornstarch dissolved in a little water. (This will make the soybean meat have a kind of thick juice).

When the pumpkin is ready (test by pricking with a fork and it is very tender) add the vegetable meat preparation, cover with cream cheese and add grated cheese on top, bake in the oven until gratin.
