What North India transforms into the Agra Petha, Mangalore does as Kashi Halwa. Made from the reduction of choicest Ash gourds(Boodhu kumbalekayi), Kashi halwa guzzles a lot of sugar, that contribute to the dehydrated, sticky nature. The nuts & cardamom are the definite cherry on the cake, but without a proper assessment of reducing the mixture, it won’t come out so good. Which is why it’s GREAT when it’s prepared expertly. Very sweet, sticky & a favourite at function catering, Kashi halwa is Kudlas quintessential dessert.
