It was quite interesting to see your recipe using an ingredient that I didn't know about such as cow or buffalo leather, I am left wondering if "gravel" is the name by which this skin is known.

We usually call them Kikil, They are chewy and need a long process to get chewy that can be eaten.
I agree that the sauce is very creamy and makes for a delicious iftar menu!
