Oh I absoluty love overnight oats. Especially in summer, when I just don't feel like cooking and eating the warm version.
My latest favourite is a chocolate one: you mush ripe banana (for the sweetness), add oats, chia, ground flax seeds, spoon of cocoa powder (not chocolate, use the real stuff), bit of vanilla, tiny pinch of salt (can be skipped) and milk of course, or any nut milk. It's like eating chocolate desert for breakfast :)
