Greetings to all who enjoy good food. For today I want to share this recipe for an omelette stuffed with potatoes, mortadella and cheese, which is very good for a rich breakfast or dinner everything will depend on your tastes.
Our omelette should be very fluffy, so the secret is to beat the eggs very well until they reach a kind of foam. In my family this dish is very popular and we use it as breakfast or dinner and with the contour of a rich sauce the one you prefer.
Ingredientes-Ingredients:
4 papas grandes.
4 huevos.
Aceite.
Sal al gusto.
Orégano.
Mortadela y queso al gusto.
4 large potatoes.
4 eggs.
Oil.
Salt to taste.
Oregano.
Mortadella and cheese to taste.
Preparación-Preparation:
Cut the potatoes into cubes and bring them to the fire with a little oregano and enough water until they soften.
After softening the potatoes, remove from heat and drain, let cool slightly.
Next, mash the potatoes with a fork until you get a puree and set aside.
Grate mortadella and cheese to taste.
Beat the 4 eggs with a pinch of salt until you get a foamy mixture.
Heat a frying pan with a little oil and add the beaten eggs.
Add our mashed potatoes and mortadella, cheese well spread over the eggs.
Fold the tortilla in half like a kind of empanada until golden brown, flip to cook the other side.
Finally, when we have it ready, we remove it from the heat and we can enjoy it accompanied by the sauce of your choice.
