The great thing about this keto bread is that besides not containing carbohydrates, is how fast we can make it, we are talking that in less than 30 minutes we can have a delicious and healthy freshly baked bread. It is ideal for toast, sandwiches or to spread with creams or soft cheeses, and the possibilities of accompaniments are really countless, everything will depend on the tastes of each person, in this case I prepared with these quantities two loaves of 22 centimeters long that were enough for two breakfasts, one with a delicious sandwich with toasted bread and fresh vegetables and another with sautéed vegetables and bread fresh from the oven, both really delicious options, and accompanied with smoked lean ham.

I must say that before preparing the bread I had some doubts, because I have not found a similar recipe on the internet, so even with the fear that it would be a complete disaster I was taking pictures of the procedure hahaha. To begin we separate egg whites and yolks and we take to the bowl of the mixer the yolks with the salt and beat at maximum speed until the egg whites are whipped, halfway through the beating we add the pepper and the oil in the form of thread and we continue, when they are already whipped we add the yolks without stopping beating one by one, and we beat until we obtain the letter point.

While the egg whites are being beaten, grate the zucchini and carrot on the fine side, and squeeze with your hands to extract as much liquid as possible from these vegetables, so that the preparation will have the right texture. If you do not do this procedure, all the air that we are incorporating in the eggs, which is what basically gives the bread its spongy texture, is reserved.

Once the egg whites and egg yolks are beaten, we add the almond flour, which we have previously sifted with the baking soda, little by little and with enveloping movements. Once the almond flour is fully integrated, we also begin to integrate the grated vegetables (zucchini and carrot) in parts with enveloping movements so as not to lose the air of the preparation. Pour the preparation into a buttered baking pan or baking paper and bake in a preheated oven at 180 °C for 15 to 20 minutes, or until a toothpick comes out clean and dry.

Once the bread is baked, let it cool for about 10 minutes before removing the paper and it is time to use it as we wish, to make the sandwich cut it in half and take it to the hot pan, previously I had heated the lean ham, so I had some of its fat that would be the only one we will put on the bread, although it accepts any type of sauces or spreadable creams without any problem.

Tomatoes, onions, avocado, salt and pepper, and ham, this was one option, the other breakfast option that can also serve for dinner or even lunch, is freshly baked bread cut into slices accompanied with a good portion of grilled lean ham and another portion of sautéed or stewed vegetables, we can even make a toasted ham and cheese sandwich and I assure you it is a complete delight.

Lo genial de este pan keto es que además de no contener carbohidratos, es lo rápido que podemos elaborarlo, estamos hablando de que en menos de 30 minutos podemos tener un delicioso y saludable pan recién horneado. Es ideal para realizar tostadas, sándwich o para untar con cremas o quesos suaves, y las posibilidades de acompañamientos son realmente incontables, todo ira en función de los gustos de cada quien, en este caso prepare con estas cantidades dos panes de 22 centímetros de lardo que alcanzaron para dos desayunos, uno con un delicioso sándwich con el pan tostado y vegetales frescos y otro con vegetales salteados y el pan recién salido del horno, ambas opciones realmente deliciosas, y acompañado con jamón magro ahumado.

Debo decir que antes de preparar el pan tenía algunas dudas, pues no he encontrado una receta parecida en la internet, así que aun con el miedo de que fuera un completo desastre le fui tomando fotografías al procedimiento jajaja. Es una receta bastante fácil y rápida de hacer, acompáñame y te muestro como la prepare.

Para comenzar separamos claras y yemas y llevamos al tazón de la batidora las yemas con la sal y batimos a velocidad máxima hasta montar las claras, a mitad del batido le agregamos la pimienta y el aceite en forma de hilo y continuamos, cuando ya estén montadas vamos agregando las yemas sin dejar de batir de una en una, y batimos hasta obtener el punto letra.

Mientras se baten las claras rallamos el calabacín y la zanahoria por el lado fino, y apretamos con las manos, para extraer la mayor cantidad de líquido posible de estas verduras, y de esta manera la preparación quede con la textura adecuada, de no hacer este procedimiento todo el aire que estamos incorporando en los huevos y que es lo que básicamente le da la textura esponjosa al pan, reservamos.

Una vez batidas claras y yemas, vamos adicionando de a poco y con movimientos envolventes la harina de almendras, que previamente hemos tamizado con el bicarbonato de sodio, una vez integrada la totalidad de la harina de almendras, comenzamos a integrar también por partes los vegetales (calabacín y zanahoria) rallados con movimientos envolventes para no perder el aire de la preparación. Volcamos la preparación en un molde enmantecado o con papel para hornear y llevamos al horno pre calentado a 180 °C de 15 a 20 minutos, o hasta que al introducir un palillo este salga limpio y seco.

Una vez horneado el pan, dejamos enfriar unos 10 minutos antes de retirar el papel y es momento de utilizarlo como lo deseemos, para hacer el sándwich lo corte a la mitad y lleve al sartén caliente, previamente había calentado el jamón magro, así que tenía algo de su grasa que sería la única que le colocaremos al pan, aunque este acepta cualquier tipo de salsas o cremas untables sin ningún tipo de problema.

Tomates, cebollas, aguacate, sal y pimienta, ah y el jamón que no falte, esto fue una opción, la otra opción de desayuno que también puede servir para cena o incluso almuerzo, es el pan recién horneado cortado en lonjas acompañado con una buena porción de jamón magro a la plancha y otra porción de vegetales salteados o guisados, podemos hacer incluso un sándwich tostado de jamón y queso y les aseguro que es una completa delicia
