Lumpia is a popular dish in the Philippines. It is served during special occasions. Who cares If I'm going to make lumpia today?
The basic filling is composed of ground pork ( you can also use chicken, fish, beef) along with the minced carrots, and minced onion,peas or veggies of your choice. Of course the vegan may avoid meat and opt for ALL veggies as fillings. Spices and seasonings are added into the mixture. It is then wrapped and rolled individually in thin flour sheets known as lumpia wrappers. The lumpia wrappers in this recipe is store-bought.
First, I sautted the meat and garlic until nearly brown, in this way I make sure the meat is properly cook. Then added the spices , black pepper, corriander to ensure that the filling taste flavorful. However, you can play around with it by adding more ingredients to bring it up to the next level. and then added the veggies and mixing all the ingredients together. Remove it from the pan when it's already cooked and allow it to cool before you can wrap it in lumpia wrapper.
Wrapping lumpia is easy, something you can get used to after a few tries.
By the way, eggs are used when making lumpia fillings to bind all the ingredients but I skipped it in my case because I'm allergic to eggs. Lumpia is deep fried until golden brown. Make sure that you do not fry the lumpia in a very hot oil to ensure that the filling gets completely cooked. Let it cook gradually,this makes it crunchy and more enjoyable to eat.
It is served with either sweet and sour sauce, or with banana ketchup.It is best eaten when warm. I love to dip mine in hot sauce.
