I thought I was the last customer for the day until a lady came by to order some food as well. I’m glad that this food stall is still open even after 9 in the evening. It’s already late, and they’re still serving, so I’m very thankful I managed to catch the stall before they close for the night.
It’s been a while since I last ordered seafood hor fun, which is one of my favorite dishes. I love the seafood and the sauce they serve alongside it, combined with the other ingredients.
I’m pleasantly surprised that even this late in the evening, the ingredients—especially the seafood—still taste good and fresh. This shows that they are doing a great job preserving the quality of their ingredients and replenishing them daily. It’s a good sign if a restaurant consistently maintains the quality of the dishes they serve. For me, freshness is key.
Among all the options I had, the seafood hor fun was my top choice for tonight. Although it wasn’t my initial thought as I walked to the restaurant, I remembered enjoying this dish in the past, and I’ve craved it many times since. I’m glad I still feel excited about ordering it.
The dish consists of flat noodles, prawns, squid, fish cakes, and fish slices. It is definitely one of my top choices when it comes to Chinese cuisine.
I’m having this at Choy Kee’s Seafood Kitchen, a humble place that surprisingly makes delicious dishes with simple ingredients. I think they’re doing a great job of creating traditional dishes that are still enjoyed today.
I wonder how they make this thick, flavorful sauce with such a unique consistency.
I guess that’s a skill only Chinese chefs have mastered. It’s the kind of sauce that’s not easy to replicate—it requires expertise, mastery of a special technique, and precise control of the temperature. So, I’ll simply appreciate it with a satisfying slurp of the ingredients and the sauce.
And of course, a much-needed condiment of my choice, the pickled green chili!
