On our recent road trip adventure to Las Vegas we had the pleasure of eating all sorts of delightful comestibles, but there was one establishment that made such an impression on us all that we ate there more than once.
The The Eggworks.
Apparently, in 1988 a restaurant known as The Egg & I was hatched (couldn't help myself), and from there on out egg history was made.
We happened to find The Eggworks by happenstance, one of the parents that was with us searched for a restaurant near us that served breakfast on the first day as we were all a might hungry after being at the range for like six hours or so. The reviews sounded promising regarding Eggworks, so we all trundled down the road to try out the place.
I am so glad that we did!
Our server, Toni, was an amazing person! As soon as she found out that we were all from Idaho, and that it was our first time eating at The Eggworks, she blurted, *"Well, let me go get some of our famous banana nut muffins."
She came back with plates bearing the most fragrant, dark umber colored muffins of awesomeness! The muffins, slathered with whipped butter were like a promise of the delightfulness to come!
We all ordered an assortment of yummy sounding things, my son got pumpkin harvest candied walnut pancakes, one of the other kids got loco moco, of course someone got an eggs benedict, and me, well I got an omelette.
But not just any omelette, a chile rellenos omelette! Mainly because it was slathered in something called Habla Diablo sauce and came with Habla Diablo spiced fried potatoes.
IT WAS AMAZING!
Everything was actually! We all declared that The Eggworks was our new favorite restaurant. Which really wasn't that big of a stretch for us, for the food was fantastic, the waitstaff was beyond incredible, the small gauge train that ran around the entire ceiling was most diverting, and the menu that resembled a newspaper was incredibly clever.

In fact, so much love hatched that day that we returned a couple days later. Toni was our waitress again, and she was so impressed we returned that she brought us free muffins again. We all dove into things like biscuits and gravy, strawberry cream cheese stuffed French toast, and various egg-themed dishes galore.
We even tried to persuade the manager to open an Idaho location!
So, if you are ever in Vegas, look up and visit an Eggworks location if you are feeling peckish. You won't be sorry!

Sounds scrumptious and I'm actually surprised you didn't try to finagle a franchise out of them. There is a certain art to the breakfast establishments where when they get it right it is super obvious and when they get it wrong... well it's just as obvious.
LOL! We did make an impassioned plea for them to expand northward, because you are so right, when an establishment gets breakfast right, it is the most right ever, and they nailed it!
