The recipe called for either brown sugar or monkfruit sweetener, which I don't have, so I used brown sugar. It does usually make things come out darker, yes - when I make chocolate chip cookies, I use all brown sugar there too and they look as though they are maybe burnt when they aren't, it's just the color from the sugar.
